Cheesy recipe – Classic Swiss fondue

Turn your cheese into something even greater than its original form (or should that be grater… we’ll see ourselves out) with a luxurious Swiss fondue. It’s easier to make a truly great, creamy fondue than you might think – here’s our recipe.

Ingredients

  • Clove of garlic
  • 1 pound grated Gruyère cheese
  • 1 pound grated Swiss cheese
  • 1 cup white wine
  • 2 tablespoons of cornstarch
  • 1 tablespoon fresh lemon juice
  • Black pepper and nutmeg to season

Directions

  1. Rub the inside of a fondue pot of medium cast-iron casserole dish with the clove of garlic.
  2. Combine the grated cheese with the wine, cornstarch and lemon juice. Add more cheese slowly and stir constantly over moderate heat until the cheeses melt together
  3. Season to taste with generous freshly ground black pepper and nutmeg.
  4. Serve with crusty bread, cherry tomatoes, tart cubed apples or deli meats.
