Cheesy recipe – Classic Swiss fondue

Turn your cheese into something even greater than its original form (or should that be grater… we’ll see ourselves out) with a luxurious Swiss fondue. It’s easier to make a truly great, creamy fondue than you might think – here’s our recipe.
Ingredients
- Clove of garlic
- 1 pound grated Gruyère cheese
- 1 pound grated Swiss cheese
- 1 cup white wine
- 2 tablespoons of cornstarch
- 1 tablespoon fresh lemon juice
- Black pepper and nutmeg to season
Directions
- Rub the inside of a fondue pot of medium cast-iron casserole dish with the clove of garlic.
- Combine the grated cheese with the wine, cornstarch and lemon juice. Add more cheese slowly and stir constantly over moderate heat until the cheeses melt together
- Season to taste with generous freshly ground black pepper and nutmeg.
- Serve with crusty bread, cherry tomatoes, tart cubed apples or deli meats.
